What Is the FSAI Safe Catering Pack?

What it is

Safe Catering is a food safety management pack published by the Food Safety Authority of Ireland (FSAI) for catering businesses. It is based on the principles of HACCP and helps businesses put a food safety management system in place and keep records that show it is working.

The record books

The pack includes a set of record books (referred to as SC1, SC2 and so on) for activities such as supplier and delivery checks, refrigeration, cooking, cooling and reheating, hot-holding, hygiene inspections, training, fitness to work and transport. Always check the FSAI website for the current version of the pack.

Why records matter

EU food hygiene law (Regulation (EC) No 852/2004) requires food businesses to put in place procedures based on HACCP principles and to keep documents and records appropriate to the size and nature of the business.

Paper or digital

Records can be kept on paper or digitally. What matters is that they are accurate, complete and available when requested. HACCPilot is designed around the Safe Catering record structure but is independently developed and is not an FSAI product.
